Pie!

With all the pumpkin carving going on, I had a lot of pumpkin "innards."   Can you believe I have never, ever done anything with them??  Shame on me, I know!

I decided to try my hand at pumpkin pie.  I checked the pantry.  Beside the graham cracker crust, I had everything in stock.  Crazy how loving to bake keeps you stocked.  

The carving kits we purchased have a simple pumpkin pie recipe.  I set to removing seeds and skin from the pumpkin guts.  It was messy!  Then it was time to boil the pumpkin "meat."


I'd never done this - how weird!

While I was boiling this, I got my blender and added eggs, sweetened condensed milk, cinnamon, cloves, nutmeg, etc. etc. to it.  I finally added the cooked pumpkin goop and hit "blend."


It came out as a very liquid puree and I was a bit worried, but I poured it into the graham cracker crust and popped it into the oven.

The house smelled amazing.

What was more amazing?  The taste.  This pie was AWESOME!  Not pretty, but so much better tasting than store-bought.  It was gone in less than 24 hours!



Thankfully, I still have more pumpkin left to make pie # 2.  Yahoo!

I didn't even know that you could make punkin pie without Libby's...

I've never made one period. I've put a frozen one in the oven. But yea, so weird, boiling the innards and adding all the ingredients and you get amazingly tasty pie!
